The exponential growth of population means more mouths to feed and more demand. This had put pressure on farmers and land to produce more. Hence more fertilizers, more chemicals and more insecticides and pesticides to give demanding consumer ever fresh and perfect veggies and fruits. In the process science has worked to make tomato look good and last long. The country tomatoes had more seeds, were juicy, thin skin and tasted good. But slowly and steadily we are losing our traditional varieties to more hybrid ones. These hybrid ones are quicker to harvest yet susceptible to pest attack invariably resulting in more usage of chemicals to kill the pest. Earlier farmers grew plants in tandem with cash crop to control pests than using pesticide which kills them. This way they neither poisoned the food nor the soil or water.
Fresh is a very artificial word, nature never dictates size and shape for anything. In natural farming we get to taste and eat vegetables and fruits of various sizes and shapes even in the same plant usually it's not uniform. Fresh today means chill and dew drops over it.

Even now small farmers cultivate food for their families without chemicals and insecticides. While the production cost of organic cultivation is not that high, the operating cost to bring the produce from the farm to the customer's homes brings in lot of challenges, processing and high operational cost.
